Jules Sherred created this image on location at the Salt Spring Sea Salt production facility. It captures that moment when the fleur de sel, a specific form of sea salt, begins to form on the surface of the water, while some of the crystals begin to sink to the bottom. You can even see the surface tension on the water. If you look very closely, you can also see the very very beginning of the pyramids forming. The process begins with the faintest hint of an outline in the water, before growing into a crystal that floats, then falls, getting ready for harvest once they have grown big enough.
